No-Bake Energy Bites

A sweet treat with simple ingredients!

These are a great option to packaged cookies and don't require turning on the oven! Easy to make and store in the fridge to enjoy for a quick treat anytime.
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1/2 cup mini chocolate chips
1 teaspoon vanilla
1 tablespoon ground flaxseed
OPTIONAL: Add up to a cup of shredded coconut.
Mix everything above in a medium bowl until fully combined.
Let chill in the refrigerator for about a half hour.
Once chilled, roll into balls and enjoy!
Store in an airtight container and keep refrigerated for up to a week.
